Recipe: Brownies

When you are eating well, it doesn't mean you cannot reward yourself once in awhile. For many of us, being able to eat steak whenever we want is a reward in itself! However, in social settings there is a desire to indulge in something else after the meal. I am going to whip up a batch of these brownies to bring over to a friend's house tonight. This is  great treat for kids and a wonderful healthy way to get kids involved in the kitchen!

Try them for yourself and see what you think:

Ingredients:
1 cup almond butter
¾ cup mashed pumpkin or other squash, canned or steamed
1 egg
1/3 cup honey
1 tsp baking soda

Combine all ingredients in a bowl.  Mix well.  Pour into a greased 8 x 8 in pan.  Bake at 350 degrees for 25 minutes or until a toothpick inserted comes out clean.  Serves 8.

Variations:

Try different nut butters or squashes. Add different chopped nuts. Add spices like cinnamon, nutmeg, and or ginger.
