Recipe: Coconut Milk by the Glass

Here’s a delicious beverage to accompany your brownies. This recipe is adapted from Eat Fat, Lose Fat by Dr. Mary Enig and Sally Fallon. It is a resource I turn to often in order to help people understand why fat is so important in our diets. There are also a plethora of recipes that can be enjoyed. Please note that both this recipe and the one for the brownies contain “sweeteners” in the form of maple syrup or honey. If your blood sugar is not yet stabilized it is best to avoid all sweeteners and to ingest them with or after a good protein/ fat containing meal.

Ingredients:

1 can WHOLE coconut milk

1 3/4 c. water

2 tbsp. maple syrup

1 tsp. vanilla extract

Mix ingredients together over a low heat until well incorporated. Serve warm or cool.

    Do you know the size of the can? On Friday I acquired a sampling of coconut products from Hmart and they are packaged in everything from in giant cans to tiny juiceboxes.

    The size of a can that I use is 13.66 ounces. You can also adjust the amount of water- making the milk thicker or thinner depending of what tastes good. I’ve added 2 tablespoons of unsweetened cocoa powder to mine for a hot winter treat!

    Hi Stephanie,

    I am trying the So Delicious brand coconut beverage (sold at PCC). I’m not sure if it has any advantage over regular coconut milk, but it’s really good in jasmine green tea! I think the whole coconut milk would be better, will try your cocoa idea soon.

    What do you think about using stevia supplements as a sweetner? Besides it being bitter if you use too much.

    Hi Sabrina-

    A lot of people like the coconut beverage- as long as there is no added sugar (or variation of sugar like cane juice, etc) I think it’s a decent way to reap the benefits of coconut. I prefer the thickness of the whole coconut milk.

    I generally like stevia as an alternative sweetener. However, for someone who has blood sugar issues or sugar cravings it is usually better to go sweetener free and get the body in better balance. It is better choice than artificial sweeteners!
